Taco Soup
- 1 lb. ground beef or turkey
- 1 pkg. taco seasoning mix
- 1 can Ro-Tel
- 1 can kidney beans, drained
- 2 cans black beans, drained
- 1 can niblet corn, drained
- 1 pkg. dry Ranch dressing mix
- 4 cups water
- ½ cup sour cream
- 1 cup shredded cheddar cheese
Brown meat, drain fat if necessary. Add taco mix, Ro-Tel, kidney beans, black beans, corn, Ranch dressing mix and water. Simmer for 15 to 20 minutes. Serve, garnish with a dollop of sour cream and grated cheddar cheese. Serve with tortilla chips.
