Pumpkin Bread
- 3 cups sugar
- 1 cup oil
- 4 eggs
- 2 T. cinnamon
- ½ tsp. nutmeg
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 (16-oz.) can pumpkin
- 2/3 cups water
- 3 ½ cup flour
- ½ cup chopped pecans, opt.
Preheat oven to 350. Grease and flour 2 loaf pans. In large mixing bowl, cream together 3 cups sugar, oil, eggs and cinnamon. Stir in nutmeg, baking soda and baking powder. Add pumpkin and water. Mix well. Slowly mix in flour, stir in nuts. Pour into baking pans. Bake for 45 minutes.
